gluten-free, dairy-free crepes


i love breakfast, and i miss crepes!

the joy of cooking, such a brilliant book, has a really different ratio and quite different ingredients than most crepe recipes, they're very sweet


gluten-free, dairy-free crepes
 
2/3 cup brown rice flour
pinch of potato starch
pinch of almond meal/flour
1 teaspoon baking powder
2 tablespoons powdered sugar
1/2 teaspoon salt
sift
mix with:
3 eggs
2/3 cup rice milk (or whatever milk)
1/3 cup water
1 teaspoon vanilla (joy of cooking calls for 1/2)
i cooked them in coconut oil 

(i double the recipe, and store it in the fridge and just make a couple at a time)



adding a third egg to the joy of cooking recipe, and using just one type of flour works best (this is a revised recipe now, thanks to a friend!) i like the flavor the almond meal provides, and cooking them at a higher temperature makes them easier to flip

i see a connection between my love for cooking and my love for cologne mixing. paying so much attention to these visceral rituals as an artistic practice is helping me really consciously experience this time in which i live. and i love sharing recipes with others navigating dietary restrictions (mine is dairy, always)
