gluten-free, dairy-free molten chocolate lava cake
i was definitely skeptical about this one, i don't know how many gluten-free baked things i've had (well, okay just one really comes to mind that was terrible, but it was absolutely inedible)
but i kid you not, this was a study in ecstacy!
gluten-free, dairy-free molten chocolate lava cake
(a recipe altered from how to be a domestic goddess by nigella lawson, frankly if you start there, you're bound for glory!)
heat baking pan in oven while preheating to 400 degrees
1/4 cup of shortening
12 oz bittersweet chocolate
1/2 cup sugar
4 eggs
pinch of salt
1 teaspoon vanilla (but i just do a splash, more the merrier!)
1/3 cup brown rice flour
melt chocolate over double-boiler & set aside to cool slightly.
cream shortening & sugar then mix in other ingredients, & add melted chocolate
pour into 4 large, or 6-8 small ramekins and place onto hot baking sheet
bake 12 minutes
and then holy cow, you'll melt the heart of everyone around you
i gave two to my neighbors & here was one email response:
"WOW! That soufflé is sooooo delicious.xxx Thank you so much. Clignement d'oil"
i'm excited to experiment now! adding rosemary, cinnamon and cayenne pepper! or drizzling with raspberry pepper sauce, lavender and a little grapefruit? the possibilities are endless...
