gluten-free, dairy-free buckwheat crepes

so i've altered the crepe recipe again

i really do love the way these turned out today, and i've never tried the buckwheat version

2/3 cup of flour: i mixed 1/3 cup of buckwheat with another 1/3 cup of mostly coconut flour and a little potato starch

4 eggs
1 cup rice milk
1/3 cup water
1/2 teaspoon salt
3 tablespoons powdered sugar
1 tablespoon vanilla (i know it seems like a lot, but makes a difference!)

cook in coconut oil for flavor on med-high heat, and stir the batter every time before you pour, just keeps it from separating

i definitely have to find something else to do while they're cooking! it only takes a few minutes, but man i'm impatient! 

(wait until you see the little bubble holes on one side before even thinking about flipping these suckers! i dumped one on the stove on accident already today...)

i'm the kind who will mess it up every time if i stand over the stove
