aunt dollie's gluten-free, dairy-free persimmon puddin'

this was my christmas gift from my mom, learning how to make persimmon puddin' gluten/dairy free 

(since aunt dollie is in north carolina and couldn't teach me herself today)
aunt dollie's 
persimmon puddin' recipe

2 cups of sugar
1 cup rice flour
1/2 cup oat flour
1/2 cup tapioca flour
2 cups persimmon pulp (about 6 large persimmons worth, we put them through a ricer)
2 cups coconut milk
2 eggs
1 stick margarine
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp baking powder
1 tsp. cinnamon

1) cream margarine (softened) with sugar 
2) mix dry ingredients in separate bowl
3) add persimmon pulp to creamed sugar
4) add eggs
5) add milk and dry ingredients alternating slowly

pour into greased 9x13-inch pan
bake at 325 degrees, about an hour

make sure the puddin' doesn't over-cook, you just want it to be pulling away from the sides of the pan. ours cooked more like 55 minutes
