wheat-free dairy-free chocolate chip cookies
i made these for a friend's birthday this weekend, and i think the combination i tried finally paid off as the entire batch was eaten by people who are neither wheat-free nor dairy-free
wheat-free, dairy-free chocolate chip cookies
2 1/4 cups wheat-free flour: 3/4 cup oat flour, 3/4 cup rice flour, 1/4 cup tapioca flour, 1/4 cup buckwheat flour, 1/8 cup potato starch, 1/8 cup xanthan gum
pinch of salt
1 tsp baking soda
1 cup granulated sugar
1/2 cup packed brown sugar
1 cup non-dairy butter
splash of vanilla
mix wet and dry ingredients separately. fold dry ingredients into wet until completely combined.
bake at 350 degrees for around 10-15 minutes. they were still really soft for my batches, but that's what people liked. enjoy!
