pear chocolate pie
i've never actually like pumpkin pie, so i wanted to make an alternative this year for thanksgiving. after the fact i don't think i'd make it for that meal again, it's not super sweet, but somehow chocolate didn't really suit the end of the meal. however, this pie was delicious!
pear chocolate pie
(inspired by a pie i had 8+ years ago at navarre)
ingredients
filling: - 1⁄2 cup brown sugar
- 4 tablespoons cornstarch
- pinch salt
- 1 teaspoon fresh grated nutmeg
- 1 tablespoon vanilla
- 2 tablespoons lemon juice
- 5 cups ripe bosc pears cored, peeled and sliced
- 1/2 bag of chocolate chips, or larger chocolate chunks
- 2 cups flour
- 3/4 cups butter room temperature
- 2 raw egg yolks
- 2 tablespoons sugar
- pinch of salt
- 2 tablespoons ice water
directions
for filling: peel and slice pears and cover in lemon juice.
in large bowl, whisk/mix brown sugar, cornstarch, salt and nutmeg.
stir pears into dry mixture and add vanilla
bake bottom pie shell in 400º oven 10 minutes with weights, 4 min without. cool a bit. bring oven up to 425º. pile pears into pie crust bottom in sections, and place chocolate in sections intermittently. roll out top of pie and cover it, and slit the top
place pie on foil-lined baking sheet (mine definitely overflowed and stuck!) bake in 425º oven for 15 minutes. reduce
heat to 350º, bake 45-50 minutes longer
