T is for turkey day

Thunder Cake!

• 1 cup of shortening
• 1 3/4 cup sugar
• 1 teaspoon vanilla
• 3 eggs
• Blend the yolks into the mixture.  Beat the egg whites until they peak (about two minutes) and fold them in.
• 1 cup cold water
• 1/3 cup pureed tomatoes 
• 2 1/2 cups cake flour
• 1/2 cup dry cocoa
• 1 1/2 teaspoons baking soda
• 1 teaspoon salt

oven to 350°F. grease two 8 1/2 inch cake pans (line with parchment for ease!)
cream shortening and sugar. beat in the vanilla and egg yolks.
add the cold water and tomatoes. in separate bowl beat the egg whites until they are stiff and fold into egg/tomato mixture. sift the flour, cocoa, baking soda, and salt together. mix the dry mixture into the wet, but don't over mix.
bake 35 to 40 min
let cakes cool on wire racks before frosting with chocolate buttercream icing. (I'm going to recommend the best chocolate icing ever from smitten kitchen of course)
top with fresh strawberries if in season
